Weight Watchers Gingerbread Cookies Recipe

Here is what you will need to make these gingerbread cookies:

This may seem like a lot of ingredients for one recipe but it takes some doing to get the flavors just right for gingerbread. Trust me, these spices are a must and you’ll be so glad that you used them when your delicious cookies come out of the oven and impress your guests, friends, and loved ones!

  • 2 3/4 Cups Cake Flour
  • 1 Tbsp Baking Powder
  • 1 Tbsp Ground Cinnamon
  • 1 Tsp Ground Cloves
  • 1 Tsp Ground Ginger
  • 1/2 Tsp Salt
  • 1/4 Tsp Baking Soda
  • 1 Egg
  • 1/4 Tsp Ground Allspice
  • 1 Cup Packed Brown Sugar
  • 3/4 Cup Dark Molasses
  • 1/2 Cup Reduced Calorie Margarine

How to make Weight Watchers gingerbread people:

Making these delicious Weight Watchers cookies is easier than you think! In just a few easy steps you will have some adorable gingerbread people ready to decorate and enjoy.

  1. Use a large bow, the first seven ingredients will need to be sifted together and then set aside for later. In another bowl or in the mixer bowl add the egg, allspice, molasses, brown sugar and margarine and beat them until smooth. Mix together the dry and wet ingredients a little bit at a time until you form a stiff dough.
  2. Make the dough into two balls, wrap them in plastic and put them into the fridge until firm, for about 1 hour.
  3. Pre heat the oven to 375°F while the oven heats up you can great your baking sheets with nonstick spray.
  4. Take out 1 of the dough balls and roll it out on a floured surface to about 1/3 of an inch thick. Using your cookie cutters cut out the gingerbread cookies, decorate with toppings if you like and place on a baking sheet.
  5. Bake the cookies for about 10-12 minutes until they are slightly firm. Cool the cookies on a wire rack after baking.
  6. Recipe makes 60 cookies, points do not include toppings you may wish to add!

What kinds of toppings can I add to my gingerbread men?

There are a lot of great toppings you can use before the cookies go into the oven. You can add things like raisins, nuts, sprinkles and more. Just be sure to add the points for those toppings to your base points!
