What goes together better than peanut butter and oats? How about peanut butter, oats,and chocolate? Now we’re talkin’! This Peanut Butter Oat Bar Recipe is chock full of protein, flavor, and joy. Best of all, these babes are refined sugar-free! What’s not to love!?

Story time:

This all started with my favorite coffee shop: Echo in Scottsdale, Arizona.

Now, when I say they have the best coffee I’ve ever had, it’s no joke. I never joke about good coffee.

But, what really blew me away this last visit? They added vegan options to their pastry case!

Woot woot!

Nothing is worse than sipping on a delicious coffee and having nothing to munch on.

So, what happened?

I bought one of these “peanut butter bars”, it looked like it would hold me over until lunch.

Oh, boy, was I underestimating the deliciousness of these babes.

One bite and they grabbed me by the soul.

Did they know peanut butter + chocolate is my kryptonite?

But, something else spoke to me:

The texture of the bars were unlike anything I’d tried before. The oats added a delicious fall-apart-feeling that only added to the delicious, almost fudge-like peanut butter.

There was only one thing to do:

Recreate these babes at home!

A Peanut Butter Oat Bar Recipe to Rule Them All!

Well, ladies and gents… I would call this a: “Major F*cking Success”

I would even argue that my bars were better than the coffee shop.. No really!

These bars:

  • Fall apart in your mouth,
  • Have a whopping 10g of protein per serving,
  • Don’t contain any refined sugar, and
  • Are perfectly sweet, without being overwhelming

This peanut butter oat bar is my new go-to breakfast meal. I love that I can make a huge batch that will last me the whole week! (Although, I totally scarfed them all down in one day🙊)

That being said, I won’t judge if you make these for dessert. We don’t discriminate here!

Ingredients

  • 1 cup smooth peanut butter unsalted
  • 1/4 cup maple syrup
  • 1 cup rolled oats gluten-free if needed
  • 1/4 cup vegan chocolate chips
  • Pinch of salt

Instructions

  • Start by whisking the peanut butter, maple syrup, and salt together in a saucepan over medium heat

  • Once fragrant and thickened (less than 5 minutes), remove from heat and pour over the rolled oats

  • Mix until nice and uniform

  • Spread into a lined baking dish (I used 8x6) and press down firmly

  • Finish by sprinkling on the chocolate chips, and press them lightly into the bars

  • Chill in the fridge/freezer for 30 minutes to set

  • Remove from dish, cut, and serve!

Notes

Store these babes in the fridge for maximum hold-togetherness (plus, it keeps the texture fudge-like!)

    I made these over the weekend – I can unfortunately never make them again because I had no self control over them, ha! They were SO easy and delicious. Thanks for the recipe!

    Would have loved to use this for my special needs kids in our life skills class……except for a word (f…) or two it would have been great.

    Hi I used smooth organic peanut butter but when I spread it on my parchment paper it did not come smooth it was breaking up. Did I do something wrong?

      I’m sorry to hear that! I’ve always used natural peanut butter as well, but I’m sure as you know: they vary wildly in texture. My suggestion would be to try again with a different brand and see if that makes a difference.
