Brownies just got a major upgrade with these brownie fries. Slices of brownie get covered in chocolate and sprinkled with salt for an amazing sweet & salty combination. Make this brownie recipe even better by dipping them in berry sauce "ketchup" and yogurt "mayo"

We recently got a Red Robin in our area and I was so excited to try them out. I didn't really know what to expect, I thought they were kind of like Applebee's or Chili's. During one of my visits I was checking out their dessert menu and was so completely drawn in by this dessert they call Fruffles(fries + truffles). They are basically fudgy brownies covered in chocolate and topped with salt. I was so taken with the dessert and wanted to try it, but by the time I was finished my burger and bottomless(!!!) fries, I was too full. So, I decided to make my own.

This is possibly the best idea I've had in years. Seriously people, this stuff is what happiness is made of! I made a berry ketchup like they did and for the "mayo" I simply used some vanilla honey Greek yogurt. The "condiments" are great because they add a nice bit of freshness and rounds out the dessert. Don't forget them. It's so easy to use. I just pureed some berries with a tablespoon of jam and that was it.

Ingredients

  • 1 cup all-purpose flour
  • ¼ cup Dutch-processed cocoa powder
  • ½ teaspoon salt
  • 8 oz semi-sweet chocolate
  • ½ cup 1 stick unsalted butter
  • ¾ cup sugar
  • 3 large eggs
  • 10 oz chocolate melted (semi-sweet or dark)
  • [Fleur de Sel] or [Maldon salt]

Instructions

  • Preheat an oven to 350 degrees F. Line a 9 x 13 inch baking pan with parchment paper.

  • Mix together the flour, cocoa powder, and salt together in a small bowl. Set aside.

  • In a medium saucepan, melt the chocolate and butter over a double boiler. Mix the sugar and eggs together, then add to the melted chocolate.

  • Stir in the flour mixture into the chocolate mixture and mix until there are no lumps. Pour the batter into the baking pan and spread evenly.

  • Bake for about 15 - 20 minutes, or until no longer jiggly. Remove from oven and allow to cool completely.

  • Cut into thin fry-like shape (I cut the pan in half lengthwise, then several times the opposite way.) Optionally freeze the fries on a baking sheet to make it easier to dip in the chocolate.

  • Melt the 10 ounces of chocolate over a double boiler. Coat each of the brownie fries with the melted chocolate and then sprinkle with the salt. Leave to harden on a wax sheet.

      I actual just puréed berries with a bit of powdered sugar and vanilla extract!

      That should say 1/2 teaspoon salt. It must've gotten deleted during the last update - apologies!

    Hi Amanda, I am happy for you that you discovered Red Robin. However, you might want to edit your post since technically you didn't come up with the idea of Brownie fries, you discovered them at Red Robins. All you did was change the name from Truffles to Brownie Fries. But, good on ya for sharing a new indulgence for those that have not tried them at the restaurant.

      Hi Sue, I never claimed to have invented them at all. In fact in the post, I clearly stated that I made my own version directly inspired by the Red Robin version. The actual recipe, however, is my own. I used my brownie recipe that you will see repeated in several recipes on the blog. This recipe, I've converted myself into a larger pan and found the appropriate baking time. But the whole time, I never claimed that the idea was an original one from me because, let's face it. I'm just not that clever 😉

    If food like this was a crime- this would be like felony level. LOL I have an evil sweet tooth, but Brownies take the cake (no pun intended) every single time. LIke any way, any how... brownies are the bomb diggity. THIS recipe sounds absolutely delicious! I'm always looking for another brownie recipe. oh yeah! Thanks for sharing! As for Red Robin- I never look at the dessert menu. lol Too tempting. lol

      Haha An evil sweet tooth is the only way to have a sweet tooth in my opinion! These brownie fries are insane, especially with berry sauce! Red Robin is so tempting in general! But their brownie fries were definitely the most tempting dessert on the menu!

    These are such a wonderful dessert idea! What's better than one brownie, than a whole basketful of brownie fries! The chocolate coating and sea salt have me craving chocolate too!
